2026

【Kikuzakari Junmai Genshu Viktor Throw into Kneebar】
2026
Made by Kikuzakari Shuzo, the sole remaining sake brewery in Kitakami, Iwate. Founded in1894, the brewery is known for its small-scale production and distinctive character. Its signature “Taxi Driver” brand was developed in collaboration with film designer Yoshiki Takahashi, with a bold visual identity rooted in subculture, rock and punk. “Viktor Throw into Kneebar” (ビクトル投げからの膝十字固め) takes its name from brewery president Fujimura’s signature technique during his time in mixed martial arts (MMA).
Despite its striking name and confrontational packaging, the sake itself is a finely balanced, lightly cloudy junmai, with a gentle spritz, generous rice umami and a clean finish. Its distinctive identity has made it a talking point among martial arts enthusiasts and sake drinkers in Japan. Brewed with Kyokai No.6 yeast, it retains fine lees and is released as nama genshu, without pasteurisation or dilution.
The aromatics are restrained, leading into a soft, rounded palate where rice sweetness and umami gradually unfold. The lightly cloudy nama genshu has a concentrated texture, with clear acidity creating contrast through the richer middle. A gentle bitter edge brings definition to the finish, leaving a lingering touch of rice sweetness and umami. Full-flavoured yet well structured, it suits drinkers who value substance beyond fruit-led aromatics
