【Tabika Sekitorimai Hiire】
Tabika is a limited, specialty-retailer-only sake brand launched by Hayakawa Shuzo in 2009. Its name comes from the Tabika River that flows near the brewery — according to local lore, when the river's water floods into the surrounding rice paddies, the fields catch the sunlight and shimmer, which is how Tabika
got its name. The brand uses only fully certified sake rice, is pressed with the traditional funa-shibori method for a gentler extraction, and is brewed with snowmelt spring water from Mt. Shakagatake in the Suzuka mountain range — resulting in a clear, soft style with full, balanced rice umami that reflects the character of its rice, water, and land.
Tabika Sekitorimai is a limited pasteurized sake from Hayakawa Shuzo in Mie Prefecture, brewed with the revived heirloom rice variety "Sekitorimai." Sekitorimai was once celebrated across Tokyo's sushi world for its superior grain quality in the late Edo to Meiji periods, disappeared during the Showa era, and was only revived in 2005 from just 200 surviving grains — making this a bottle carrying real historical weight.
The aroma steers away from a fruit-forward style, leaning into steamed rice, grain, nuttiness, and herbal notes. The palate opens with solid rice umami and gentle sweetness, moving into Sekitorimai's full-bodied texture and quiet strength through the mid-palate, before a crisp acidity and clean, dry finish bring it to a close.
