From Kankiku Meijo in Chiba, this ultra‑limited year‑end release is a “thank you in a bottle”, with the number 39 playing on “thank you” (san‑kyuu) in Japanese. It is brewed from 100% Omachi rice polished down to 39%, using only the clean, elegant “nakadori” (middle cut) portion, then gently bottle‑pasteurized to preserve freshness and clarity at about 15% alcohol.

Omachi at 39% polishing delivers a pure, silky texture and refined umami, while still showcasing Kankiku’s signature modern, fruit‑forward profile. Selecting only the nakadori fraction focuses the flavor and removes roughness, and the single heat treatment keeps the sake vivid yet stable, making it a graceful partner for festive but not overly heavy year‑end and New Year dishes.
