「椎谷 α」是阿部酒造圃場別系列中少見的「水」主角作，靈感來自新潟縣柏崎市臨海地區——椎谷的風土與水源。阿部酒造從既有的酒造好適米中精選原料，搭配椎谷地區井戶水，以實驗性原型方式釀出這一款 α。椎谷的井戶水屬於帶礦物感的中硬水，風格與酒藏所在安田地區的軟水截然不同，造就爽快利落、線條分明的口感取向

此酒是阿部酒造與在椎谷營運桑拿設施「SHIIYA VILLAGE」的合作款，以同一井戶水為連結，將當地水風呂的清涼感轉化為杯中的清酒體驗。 開瓶後香氣低調乾淨，入口俐落，重點在「清爽、清新、帶有涼感」。中硬水帶出的礦物感讓酸度顯得更筆直，酒體輕盈卻不單薄，清爽如海風吹臉，尾韻乾淨收斂，很適合配搭油脂感較高或煙燻風味料理

【Abe Shiya α Field Series】

Abe Shiya α is a rare “water-driven” expression within Abe Shuzo’s Field Series, inspired by the coastal Shiya area in Kashiwazaki, Niigata. Classified as a “sea area” field, the brewery selects suitable Niigata rice from its own stocks and focuses on showcasing Shiya’s well water. The water is a mineral-rich medium-hard type, completely different from the softer water around the brewery in Yasuda, resulting in a crisp, sharply contoured sake profile.

This bottling is a collaboration with SHIYA VILLAGE, a sauna facility in Shiya that uses the same well water for its cold baths. On the nose, the sake is restrained and clean; on the palate it is light, refreshing and distinctly dry, making full use of the structure that medium-hard water brings. Minerality and straight-lined acidity cut neatly through richness in food, leaving a dry and tidy finish that feels like a sea breeze rinsing the palate.
